At Oli Cometes we are proud to be one of the few producers of organic and biodynamic extra virgin olive oil with Demeter certification in Spain and the only ones in Catalonia. This international certification guarantees that every drop of olive oil has been produced with the highest standards of quality and respect for the environment, following natural and cosmic rhythms.

WHAT IS THE DIFFERENCE BETWEEN VIRGIN OLIVE OIL AND EXTRA VIRGIN OLIVE OIL?
Virgin olive oil is the juice obtained directly from fresh, healthy olives through physical and mechanical procedures. However, to be considered extra virgin olive oil, it must be an oil without defects, both chemically and organoleptically. For example, it must have an oleic acidity of less than 0.8° and successfully pass a sensory analysis without defects carried out by an approved tasting panel.
WHAT IS THE DIFFERENCE BETWEEN EXTRA VIRGIN OIL AND ORGANIC EXTRA VIRGIN OLIVE OIL?
Organic extra virgin olive oil meets the same quality requirements, but it has also been produced without synthetic chemicals, allowing the use of natural chemicals and pesticides such as copper. At Oli Cometes we go one step further: we follow the biodynamic farming method, which prohibits the use of chemicals and pesticides (replacing them with minerals and phytotherapy). In addition, it understands the farm as a living being and works in harmony with the cycles of nature. Biodynamic olive oil is the healthiest olive oil you can consume.

ESTELS
Organic extra virgin olive oil certified by the CCPAE
Estels oil is made with olives from the olive trees located further inland on the estate and we categorize it as organic extra virgin olive oil. It is milled on leaf and/or root day according to the biodynamic calendar. It is a greener oil from the beginning-middle of the season.

COSMOS
Organic and biodynamic extra virgin olive oil certified by Demeter
Biodynamic oil has numerous nuances that make it the featured product of gourmet oils on the market.
Cosmos oil has been awarded at the most prestigious international virgin olive oil competition, the NYIOOC (New York Olive Oil Competition), winning a silver medal in 2024 and a gold medal in 2025 (the highest award of the competition).

SEASONED
Seasoned oils based on LLUNA oil, made with natural herbs and spices such as rosemary, pepper and cayenne, thyme and garlic, lemon or basil. Some of them awarded at the AVPA International Oil Competition 'Gourmet Product Diploma' (spicy, thyme and garlic and rosemary) and gold medal in the 'Infused' category at the Berlin GOOA (Global Olive Oil Awards) for the thyme and garlic.

HOW WE PRODUCE
COMETES OLIVE OIL?
Currently, only 7 producers in Spain have this certification, and we are the only ones in Catalonia. A recognition that certifies the quality, sustainability and unique character of our oils.
We fertilize and treat the olive trees without chemicals, using biodynamic preparations made from minerals and phytotherapy (herbal infusions) and following the biodynamic calendar.
We harvest the olives following the biodynamic calendar based on the moon. The harvest is done with a mechanical vibrator and then the olive trees are checked manually. This way we prevent them from falling to the ground by collecting them all with the inverted umbrella, preserving all their properties.
Once harvested, the olives are sorted using a sieving and blowing system that separates the olives from the leaves. We do not wash them because we do not use chemicals, thus preserving phenols and aromas.
The olive paste is crushed and then beaten in semi-automatic mode to minimize oxidation and maintain all the organoleptic qualities (aroma, spiciness, bitterness, astringency).
We separate the oil by centrifugation and filter it through a coarse system (very gentle filtration). Afterwards, we let it settle in a tub for 3 weeks, purging the impurities and thus preserving its antioxidants and vitamins.
We store the oil in stainless steel tubs (with a floating lid that creates a vacuum) with protection against light and oxygen, its greatest enemies, always inside the cellar at a controlled temperature.
We use phthalate-free glass and tin containers (plastic-free). We package on demand to guarantee maximum freshness and quality of the product. We distribute in Catalonia and export to Europe.
